I recently discovered the wonders of the Coconut.
While in Thailand, I discovered the healing qualities of the Coconut for face and hair care. I have been using Virgin Coconut Oil for my hair for years. My hair is softer, stronger and more manageable.
But Coconuts are not simply a beauty product.
Coconuts are packed full of goodness – high fiber, high protein, and powerful antioxidants. You can use the meat, the water and the oil for cooking scrumptious and healthy meals and snacks for your family. You can make milk, cream and flour from it.
Today I made the following from recipes on the Tropical Traditions Recipe Blog using coconut flour, shredded coconut, and coconut oil.
Gluten Free Zucchini Muffins
The are so yummy! Light and fluffy. And a winner with my kids. They wanted more!!
Chocolate Coconut Balls
I love these because they are quick and easy. No baking necessary. And it’s a great way to tame a chocolate craving. I made 2 batches. The first batch, I added half the sugar. The were a little more bitter, but being a lover of dark chocolate, I don’t mind. The second batch I replaced the sugar with pure 100% Maple Syrup (no added sugar or preservatives). Perfection. My kids didn’t notice a difference. And I am gonna have to keep these babies on a high shelf in the fridge to keep little fingers from sneaking treats!!
